Tailgating time ... BBQ Chicken Pizza

BBQ Chicken Pizza

One can Pillsbury refrigerated Pizza Crust
One bottle of your favorite BBQ sauce
Left over baked chicken or two cans of canned chicken (drained)
1 1/2 cup shredded cheddar cheese

Pat crust onto cookie sheet, top with BBQ sauce. Shred chicken and scatter over sauce. Sprinkle cheese on top and bake at 400 degrees for fifteen minutes or til crust is browned. Enjoy!!

Tailgating time .... "Wow Factor" Brownies (gluten free)


My talented niece, Angie, made these for a family event. Needless to say, they were a big hit.  Take these to your next Tailgate or Hog Party and Wow the fans!





I made these gluten free, but you can use a regular flour and get the same results.

Brownie:
1/2 cup butter
1 cup sugar
2 eggs
1 tsp vanilla
1 tsp Kahlua
1/3 cup cocoa
1/2 cup flour (I used brown rice flour)
1/4 tsp salt
1/2 cup walnuts or pecans
dash cinnamon

Filling:
6 oz. cream cheese (at room temp)
1/3 cup powdered sugar
1/3 cup mini semi-chocolate chips
1 Tbsp Kahlua

Kahlua sauce:
2 Tbsp butter
3 Tbsp Kahlua
1/8 cup sugar

Topping:
12 fresh strawberries
12 fresh raspberries
12 large banana chips
1/4 cup melted semi-sweet chocolate chips
1/4 cup melted white chocolate chips

Preheat oven to 350. Spray a cupcake/muffin pan with Pam.

To make the brownies, melt the 1/2 cup butter in a medium sauce pan. Add sugar, vanilla, Kahlua and cocoa powder just until the butter is completely melted. Take the sauce pan off the heat and add the remainder of the ingredients, adding the nuts at the very end. Pour evenly into the 12 cupcake cups.

Next, mix together the filling and spoon 1 Tbsp of filling into the middle of each brownie cup. Bake for 18 minutes in the preheated oven.

While the brownies are baking, make the Kahlua sauce by adding all of the ingredients into a small sauce pan. Bring to a boil and let it boil for 1 and a half minute. Set aside.

Melt the dark chocolate and white chocolate separately.

Once the brownies are done and cooled completely, dip the strawberries in the Kahlua sauce and place on top of the brownies. Next, dip the raspberries in the white chocolate and place beside the strawberries. Lastly, dip the banana chips in the dark chocolate and place beside the other berries. Lastly, drizzle the remaining Kahlua sauce over the entire brownie.

Tailgating Time .... Sweet Potato Pecan Pie


Sweet Potato Pecan Pie

1 pound of sweet potatoes, cooked and peeled
3/4 cup butter
1 can of Eagle Brand condensed milk (not evaporated milk)
1 tsp. grated orange peel
1 tsp. vanilla
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
2 eggs

One unbaked pie shell

Preheat oven to 350 degrees. In a large bowl, beat the potatoes and butter til smooth. Add the remaining ingredients other than the pecan topping and mix well. Pour into the pie shell. Bake 50 minutes. Remove from oven and spoon Pecan Topping onto the pie and bake an additional 20 minutes. 

Pecan topping:

1 cup of pecan halves
1 cup of brown sugar
1/2 cup of flour
1/3 stick of butter

Mix sugar and flour together. Cut in the butter  til crumbly then stir in the pecans.

Tailgating Time .... Cherry Crumble Pie


Cherry Crumble Pie


One unbaked pie crust
One quart of canned cherries (or two cans). Not pie filling
1 1/4 sugar
10 Tbs cornstarch
4 drops of red food coloring
1 Tbsp butter
1/2 tsp. almond extract

Preheat oven to 350 degrees. In saucepan or a Dutch oven, heat the cherries. Combine the sugar and cornstarch and add to cherries.  Add food coloring. Stir constantly.  Bring to a boil and simmer on low for about one minute. It will thicken and the sauce will  become clear. Add butter and stir til melted. Take off of heat and stir in extract. Pour into prepared pie shell.

Crumble Topping

1 cup of flour
1/2 cup of packed brown sugar
1/2 c of butter

Combine flour and sugar. Put butter in mix and cut in til it crumbles and mixture is the size of peas. Sprinkle on top of cherry filling and bake the pie for about 30 minutes or til crust is brown.

Tailgate Time .... Razorback Red Broccoli Cherry Salad


Broccoli Cherry Salad

One head of broccoli broken into pieces
One jar of good bacon bits
One cup of dried cherries
One cup of sunflower seeds
One half of a sweet onion - slivered
One cup of chopped celery
Two heads of romaine - slivered
Dressing:
One cup of mayonnaise
Four tablespoons of sugar
Three tablespoons of red wine vinegar
 ( may add more sugar or vinegar to taste)

Combine all salad ingredients. Make dressing ingredients about an hour or more ahead of time so flavors  can blend. Add dressing to salad and toss to coat about fifteen minutes prior to serving.

Tailgating Time ... Sweet Potato Bites




To tailgate, combine all and place in a foil pack. Place on the grill for 40 min.  Or bake at home then place in foil pack. Reheat on grill.

To Bake:

2 sweet potatoes, skinned and cubed
3 Tbsp butter melted
1/2 tsp cinnamon
Dash salt
2Tbsp sugar
Mix all and bake at 350 for approximately 30 minutes.

Sausage Jalapeno Poppers


Sausage Jalapeno Poppers

You need:
20 jalapeƱos, one brick of cream cheese, one pound of breakfast sausage, 1/2 cup of milk, and 1/2 cup of shredded cheese.  Directions:  cook sausage in a skillet til crumbly and browned. Drain onto paper towels. Place sausage back into skillet and add milk and cubed cream cheese. Cook on low til cheese is melted. Meanwhile, spray a 9x13 baking dish and layer jalapeƱos ( cut side up)that have been halved and all seeds and membranes removed. Fill the halves with the creamy sausage mix. Sprinkle shredded cheese on top and bake at 350 degrees for 45 minutes.

Tailgate Time ...... Pumpkin Crumble




Pumpkin Crumble
Filling:  one small can of pumpkin. Prepare filling according to pie recipe on the back of can. Pour into a buttered or spayed 9x13 baking dish. For topping: sprinkle one box of dry yellow cake mix on top of pumpkin filling. Sprinkle 3/4 cup of chopped walnuts or pecans on top of cake mix. Melt 3/4 cup of butter and drizzle on top of cake mix layer. Bake at 350 degrees for about 40 min.

Ravin Razorback Dip

Ravin Razorback Dip 1 8 oz. pckg of cream cheese 1/2 cup of mayonnaise 1/4 cup of Parmesan 1/2 cup grated cheese 1 pckg real bacon bits 1/4 cup dehydrated onions Dash of salt 1/4 tsp. garlic powder One can of French's onion rings Mix all ingredients except onion rings. Place in a sprayed baking dish and sprinkle onion rings on top.  bake for 20 minutes at 350 degrees. Serve with chips.
