HogSnaps finds these goodies

It's a great time of year to find 'Go Hogs' goodies all across the state. If you look in a well-stocked Wal-Mart, you'll find the Razorback jello molds.  I found these in Bryant. I found the Razorback bench for sale at The Flower Patch in Brinkley.

"Hog Dogs" Tailgating good eats!


"Hog Dogs" are grilled, bacon wrapped hot dogs.  Yum!!!




Hot dogs...hotdogs...hot dogs.  Great picnic, grilling, and all time tailgating favorite. There are so many ways to prepare them, and so many toppings that can be used that you just have to pick your "food mood" and slather on those types of toppings. My all-time favorite brand is Hebrew National. To me it has the best flavor and ingredients. Try it and see. 

Whatever the occasion, get adventurous with your toppings. Here are a few suggestions to get you started:
  • Refrigerator Pickled SlawSoftball Supper. Green chiles + fresh corn + red onion
  • Saturday in the Park. Tomatoes + onions + steak sauce
  • Date Night on the Patio. Caramelized onions + shredded Gruyère cheese
  • Pool Party. Pineapple + lime + red onion + cilantro + jalapeño pepper
  • Backyard Bash. Mayo with chili garlic paste + pickled veggies + cilantro
  • Grandma’s in Town.     Fave slaw recipe
  • Friday Night Franks. 3:1:1 ratio of mayo to sriracha sauce to lime/lemon juice.

Tailgating time ... BBQ Chicken Pizza

BBQ Chicken Pizza

One can Pillsbury refrigerated Pizza Crust
One bottle of your favorite BBQ sauce
Left over baked chicken or two cans of canned chicken (drained)
1 1/2 cup shredded cheddar cheese

Pat crust onto cookie sheet, top with BBQ sauce. Shred chicken and scatter over sauce. Sprinkle cheese on top and bake at 400 degrees for fifteen minutes or til crust is browned. Enjoy!!

Tailgating time .... "Wow Factor" Brownies (gluten free)


My talented niece, Angie, made these for a family event. Needless to say, they were a big hit.  Take these to your next Tailgate or Hog Party and Wow the fans!





I made these gluten free, but you can use a regular flour and get the same results.

Brownie:
1/2 cup butter
1 cup sugar
2 eggs
1 tsp vanilla
1 tsp Kahlua
1/3 cup cocoa
1/2 cup flour (I used brown rice flour)
1/4 tsp salt
1/2 cup walnuts or pecans
dash cinnamon

Filling:
6 oz. cream cheese (at room temp)
1/3 cup powdered sugar
1/3 cup mini semi-chocolate chips
1 Tbsp Kahlua

Kahlua sauce:
2 Tbsp butter
3 Tbsp Kahlua
1/8 cup sugar

Topping:
12 fresh strawberries
12 fresh raspberries
12 large banana chips
1/4 cup melted semi-sweet chocolate chips
1/4 cup melted white chocolate chips

Preheat oven to 350. Spray a cupcake/muffin pan with Pam.

To make the brownies, melt the 1/2 cup butter in a medium sauce pan. Add sugar, vanilla, Kahlua and cocoa powder just until the butter is completely melted. Take the sauce pan off the heat and add the remainder of the ingredients, adding the nuts at the very end. Pour evenly into the 12 cupcake cups.

Next, mix together the filling and spoon 1 Tbsp of filling into the middle of each brownie cup. Bake for 18 minutes in the preheated oven.

While the brownies are baking, make the Kahlua sauce by adding all of the ingredients into a small sauce pan. Bring to a boil and let it boil for 1 and a half minute. Set aside.

Melt the dark chocolate and white chocolate separately.

Once the brownies are done and cooled completely, dip the strawberries in the Kahlua sauce and place on top of the brownies. Next, dip the raspberries in the white chocolate and place beside the strawberries. Lastly, dip the banana chips in the dark chocolate and place beside the other berries. Lastly, drizzle the remaining Kahlua sauce over the entire brownie.

Tailgating Time .... Sweet Potato Pecan Pie


Sweet Potato Pecan Pie

1 pound of sweet potatoes, cooked and peeled
3/4 cup butter
1 can of Eagle Brand condensed milk (not evaporated milk)
1 tsp. grated orange peel
1 tsp. vanilla
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
2 eggs

One unbaked pie shell

Preheat oven to 350 degrees. In a large bowl, beat the potatoes and butter til smooth. Add the remaining ingredients other than the pecan topping and mix well. Pour into the pie shell. Bake 50 minutes. Remove from oven and spoon Pecan Topping onto the pie and bake an additional 20 minutes. 

Pecan topping:

1 cup of pecan halves
1 cup of brown sugar
1/2 cup of flour
1/3 stick of butter

Mix sugar and flour together. Cut in the butter  til crumbly then stir in the pecans.
